Emerging Dining Trends in Long-Term Care White Paper
NFEFoundation recently partnered with Technomic, one of the nation’s leading food research firms, on a project that yielded data-driven evidence about the emerging trends in the dining habits and preferences of long-term care residents.
The professional environment for nutrition and foodservice management in the United States is rapidly changing. Consumers have become more empowered and choice-driven, with higher expectations for their culinary experiences when dining in foodservice settings.
Cafeterias and foodservice centers across the country are experiencing this change, particularly in health-care settings, such as hospitals and senior care facilities. As this environment continues to change, the nutrition and foodservice profession will need to adapt.
Recognizing this need, the Nutrition and Foodservice Education Foundation has been re-launched with a new focus and mission. The new NFEF is helping the foodservice and nutrition profession stay ahead of rapid change by fostering innovative thinking, cutting-edge research and new ideas.
Our highest priority is education for the future. We encourage and reward nutrition and foodservice leaders and organizations who are helping our profession adapt, grow and change. We share their ideas and knowledge to benefit those we serve and to ultimately achieve a healthier society. Learn more here.

Chef Robert Winther, CDM, CFPP 2012 CDM Exam Scholarship Recipient
"In 2012, I received the NFEF scholarship to sit for the certification exam, two months later my results arrived! I was empowered to do more! Passing the exam gave me a renewed motivation to look for better opportunities, and take on more responsibilities.
By becoming a CDM, I realized this is only the beginning of my career; I can do what I love and be a professional in the culinary industry, as well as the health care industry.
I set very high standards for myself each and every day and I expect the same of other professionals. It is a challenge to “get it right”, every day for our residents, but feel it is my responsibility to do so. I feel blessed to have found my niche’ in life. To cook from my heart and to help others through the nourishment from our foods. Each day I learn from my mistakes as well as triumphs.
I plan to continue my training and culinary education and want to continue to attend ANFP and ACF educational opportunities. The NFEF was just a kick start for who I will become."
